INSTRUCTIONS
I often fix Potato Pancakes for breakfast using leftover mashed potatoes.
BTW, I always use Idaho potatoes, milk, butter and salt for my mashed
potatoes. Next morning I take the leftovers (say about 2 cups) add 1 cup of
flour, 1/2 cup minced Maui onion, and an egg. I drop them by heaping
tablespoons onto a hot skillet to which I've added butter and/or olive oil.
I reduce the heat to medium and allow them to brown on one side. When I
flip them I salt and pepper and wait for the other side to brown. They are
delicious and a family favorite! Enjoy! Me ke aloha, Mary
