Mashed Potato Candy is simple to make. This recipe is a family christmas
tradition. It is VERY sweet.
Mix mashed potato and 2 cups powdered sugar in good sized mixing bowl.
Potatoes will become watery at first. Continue adding powdered sugar until
mixture is thick enough to roll. It may not take all the sugar, or it may
take more, humidity will cause amounts to vary.
Sprinkle powdered sugar on pastry sheet. Take a portion of the potato
mixture and roll it out using a powdered sugar coated rolling pin. When
mixture is about 1/4 inch thick spread a layer of peanut butter over the
potato mixture. Starting on the longest side, roll the dough up into a
tight roll. Slice the roll into pieces about 1/2 inch thick. Candy can be
stored in a covered container.
