INSTRUCTIONS
Prep: 10 min, Cook: 30 min. Preheat oven to 375øF. Whisk eggs in a
mixing bowl. Add flour, baking powder and salt and mix thoroughly.
Stir in next 3 ingredients. Transfer to a buttered 9 inch baking dish.
Bake 30-35 minutes or until center is just set. Let stand 5 minutes
before cutting into squares. Melt butter in a heavy nonstick skillet
over medium heat. Saut ham 2-3 minutes per side until browned.
Transfer to a platter and keep warm until ready to serve with eggs and
salsa. This recipe serves 8 people. Because this recipe is for a
particular size pan, it adjusts the number of servings only in
multiples of 8. Per serving: calories 370, fat 20.4g, 50% calories
