INSTRUCTIONS
1. Wash lettuce leaves and line a deep, 1 1/2-quart, heat- resistant,
non-metallic casserole with half of the moist lettuce leaves. Top with
peas. 2. Sprinkle peas with sugar, salt, pepper, and mint and dot with
butter. Cover peas with remaining lettuce leaves. Heat, covered tightly, in
Microwave Oven 9 minutes or until peas are tender. 3. Carefully tilt cover
to allow steam to escape. Then remove cover. 4. Remove lettuce leaves and
toss peas well before serving. VARIATIONS: 1/4 teaspoon dried chervil or
savory may be substituted for dried mint leaves.
