INSTRUCTIONS
1. Wash berries and pat dry. Distribute berries equally into 4 individual
oven-proof ramekins or bowls, or into a large shallow baking dish. 2.
Preheat broiler. In bowl of an electric mixer, whisk egg yolks until thick
and lemon-colored. With motor running on medium-high speed, slowly add
sugar, beating to a thick foam. 3. In a small saucepan, heat wine to
boiling. With motor running on medium-high speed, gradually add hot liquid
into egg mixture. (Start with a tablespoon at a time, mixing constantly,
and increase amount gradually until all liquid is added.) 4. Pour mixture
evenly over berries. Broil about 4 inches from heat for 3 to 5 minutes or
until tops begins to brown. (Watch attentively as it cooks quickly.) Serve
immediately.
