Hi everyone! This recipe is great with chicken! Enjoy!
Bring water and salt to a boil in saucepan; stir in the rice. Cover, reduce
heat, and simmer 1 hour or til rice is tender and liquid is absorbed. Set
aside and keep warm. Cook bacon in a skillet until crispy; remove and
reserve drippings. Set bacon and drippings aside. Return 1 tbs drippings to
the skillet. Combine eggs, 1/2 tsp salt and pepper; pour the egg mixture
into the skillet. Cook over medium heat for 8 minutes or til almost set and
bottom is lightly browned. Gently flip over and cook til bottom is lightly
browned. Remove from skillet and cut into very thin strips. Combine
reserved rice, reserved bacon. reserved drippings, egg strips, butter and
chives in serving dish; toss gently. Serve.
