Recipe By : Deb Steelman
Place apple juice in non stick pan. Add eggplant and onion. Cook until
onion and eggplant are soft and tender. Add tomatoes and allspice. Simmer
until done, about 30 minutes.
Serving Ideas : Serve with fresh whole wheat bread or pita.
