INSTRUCTIONS
Preheat oven to 400 degrees. Lightly grease 12 muffin cups. Combine dry
ingredients and set aside. Mix applesauce, eggs, oil, sugar, and vanilla.
Stir in dry ingredients until almost completely mixed, then gently stir in
raisins. Drop batter into muffin cups, filling about 2/3rd of the way up,
and sprinkle tops lightly with granulated sugar. Bake 20-22 minutes, until
tops spring back lightly when touched. Let cool in pans 5 minutes, then
remove to wire rack to cool completely.
