INGREDIENTS

2 tb Oil
2 Bay leaves
5 Cm cinnamon stick
4 Cardamoms
1 lg Onion; finely chopped
170 g Mushrooms; sliced
325 g Basmati rice; washed and drained
1 ts Salt
825 ml Water

INSTRUCTIONS

1. Heat the oil in a large saucepan over a medium high heat. Add the bay
leaves, cinnamon and cardamoms and let them sizzle for a few seconds.
2. Add the onion and fry until soft. Add the mushrooms and fry for about 5
minutes.
3. Add the rice and salt and stir fry for 2-3 minutes. Add the water and
bring to the boil.
Cover tightly, reduce heat to very low and cook or about 20 minutes until
all the water has been absorbed. Fluff up the pilau with a fork and then
serve.
