Dairy Sauces, Mushrooms 4 Servings

INGREDIENTS

1 tb Margarine or butter
8 oz Fresh mushrooms; sliced
3 tb Margarine or butter
3 tb All-purpose flour
1/2 ts Salt
1 c Milk

INSTRUCTIONS

1. Combine 1 tablespoon margarine and the mushrooms in medium bowl.
Microwave at high (100%) until mushrooms are tender, 2-5 minutes, stirring
once or twice. Set aside.
2. Place 3 tablespoons margarine in 1 quart casserole. Microwave at high
(100%) until melted, 30 seconds to 1 minute. Stir in flour and salt. Blend
in milk. Microwave at high (100%) until very thick, 3-6 minutes, stirring
once or twice. Stir in mushrooms and liquid from mushrooms. Serve over
vegetables or meat. Makes 1 1/2 cups.
