INSTRUCTIONS
Heat oven to 400~. Season roast with salt and pepper, place in shallow pan
and roast for 30 mins.; remove from oven, spread surface with mustard and
then cover with crushed croutons. Return to oven and continue to roast for
10-15 mins. longer, until meat thermometer registers 155~. Source: National
