INSTRUCTIONS
Combine cornmeal, flour, and salt. Cut in shortening and cheese until
mixture resembles coarse crumbs. Add milk, stir ring lightly only until dry
ingredients are dampened.
Knead gently for a few seconds on lightly floured board. Roll out to
1/8-inch thickness. Cut into strips, triangles, diamonds, or other fancy
shapes. Place on baking sheet and bake at 375° for 12 to 15 minutes or
until delicately browned. Serve warm or cold. Yield: 3 dozen.
