3/4 | c | Fresh spinach, torn into |

3/4 | c | Cooked brown or white rice |
chilled | ||
1 | 11 ounces Mandarin orange | |
segments | ||
3/4 | c | Chopped pecans |
Dollop of plain yogurt or | ||
sour cream for garnish |
INSTRUCTIONS
Stir together Cheddar cheese and 1 cup yogurt; set aside. Remove inside portion of lettuce head. Spread 1/2 cup of Cheddar cheese mixture inside shell. Layer with 3/4 cup Swiss cheese, spinach, rice, 2 cup cheese mixture, orange segments, 3/4 cup Swiss cheese, remaining cheese mixture, and pecans. Refrigerate 3 hours or until ready to serve.
