INSTRUCTIONS

Preheat oven to 400 degrees. Coat muffin tin with non-stick cooking spray.
In large bowl mix together skim milk, egg, oil and oats. Let sit while you
peel and dice the nectarine. Set nectarine pieces aside. Combine flour,
sugar, 1 teaspoon cinnamon, baking powder and salt together in a separate
bowl. Mix together wet ingredients(milk mixture)with dry ingredients(flour
mixture). Blend until dry ingredients are just moistened. Do not over mix.
Fill each muffin cup 1/2 full with batter. Top with nectarines and sprinkle
remaining cinnamon on top. Bake muffins for approximately 20 minutes or
until slightly brown around muffin edges. Let cool in pan for 5 minutes.
Remove and place on rack until completely cool. Yield: 12 muffins
