INGREDIENTS

1 Fryer chicken -, abt 3 lbs
rinsed and
Innards removed
1 Piece Fresh ginger -, abt
1" long
1 c Chopped green onions
1 t Szechwan brown peppercorns

INSTRUCTIONS

Season the chicken with salt and pepper. Place the chicken in a pot
and cover with water. Add the remaining ingredients. Bring the liquid
to a boil and cover. Turn off the heat and cook for 2 hours. Strain
and remove the meat, discard the bones. This recipe yields about 1  1/2
