INSTRUCTIONS
~-- White sauce: --- 3 tablespoons margarine 3 tablespoons all-purpose
flour 1 1/4 teaspoons salt 1/4 teaspoon black pepper 1 3/4 teaspoons ground
nutmeg 2 1/2 cups milk
1. Bring 3 quarts water to a boil; add salt if desired. Gradually add
noodles to boiling water; keep water boiling. Cook, uncovered, for 5
minutes; stir occasionally. Drain. 2. Toss the noodles with margarine, then
with Parmesan cheese. Add cubed Swiss and mozzarella cheese and toss
lightly. 3. Turn half the noodles into greased 3-quart casserole dish (or
use a 13 x 9 x 2-inch dish). Top with half the white sauce. Repeat layers;
sprinkle more grated Parmesan on top. 4. Bake in preheated 350-degree oven
for 25 minutes or until bubbling.
WHITE SAUCE: Melt margarine in saucepan. Blend in flour and seasonings.
Gradually add milk and cook, stirring constantly, until sauce boils 1
minute.
