Let the mixture stand for 10 minutes to let the Oat Bran absorb liquid. Do all in a KitchenAid mixer if available. Stir in Salt. 1 cup at a time, mix in flour until the dough becomes too difficult to stir. Turn out on to a well floured work surface and knead until smooth and elastic, about 8 minutes. 4 or 5 minutes on the KitchenAid. Place the dough in a large well oiled bowl, turn to coat and cover with plastic wrap. Lightly oil a 5 by 9 inch loaf pan. Gently punch down the dough and transfer to a well floured work surface.
