INSTRUCTIONS
Pour the milk over the oats and let stand 30 minutes (don't use instant or
quick cooking oats - they make a tasteless muffin). Mix butter, honey or
sugar, mace and egg in a bowl, then add oatmeal and mix again. Sift
remaining ingredients together, add and stir enough to blend -- the less
stirring, the better the muffins.
Grease 1 1/2 to 2 inch muffin cups, fill 2/3 full with batter and bake in a
400 degree F oven 12-15 minutes.
NOTES : A 10-year old girl made these for me when I was judging ahoney
contest in Winnipeg. They were so good that I asked her for the recipe.
Serve them hot with whipped butter and Manitoba honey.
