Christine, how about a cookie recipe? These are really good. The recipe
comes from Mary Watson, dietitian at the Creighton Cardiac Center who
modified the recipe. She includes this recipe in a class on soluble fiber.
Cream together sugars, margarine, and yogurt. Add vanilla, eggs, sour
cream, and oats. Add the remaining dry ingredients, continuously mixing.
Fold in raisins. Drop by 1 1/2 tablespoons onto baking sheet strayed with
non-stick spray. Bake at 375 degrees F for 10-12 minutes. Yield: 36
cookies.
Nutrition Information Per Serving: calories, 85; fat, .9 gram; saturated
fat, trace; cholesterol, 0 milligrams; sodium, 25 milligrams; fiber 1.2
grams; water soluble fiber, .5 grams.
