INSTRUCTIONS
Preheat oven to 350 degrees. In skillet with oil, combine okra and onions.
Saute until onions are translucent. Add garlic, salt, pepper, rice and
butter. Saute. Allow to simmer. Meanwhile, cut tops from tomatoes and
carefully scoop out pulp. Set tomato shells aside. Stir pulp into okra
mixture. Add cajun spice. Stuff tomatoes with okra mixture. In shallow
baking dish, place stuffed tomatoes. Cook until heated throughout. Serve
warm.
