INGREDIENTS

1 lb Lentils
2 Celery ribs with tops, cut
in thirds
1 Carrot, scraped halved
1 Onion, coarsely chopped
1 t Minced garlic
1 t Salt
1/8 t Freshly-ground black pepper
2 qt Water
1 Spam luncheon meat -, 7 oz
cubed
1 T White vinegar

INSTRUCTIONS

In large pot, combine lentils, celery, carrot, onion, garlic, salt,
pepper, and water; bring to a boil. Cover and simmer 45 minutes.
Remove from heat; cool slightly.  Place half of lentils and all celery
and carrot in food processor or  blender; process until pureed. Return
to pot. Add Spam to soup. Bring  to a boil; cover and simmer 15
minutes. Stir in vinegar. Mix well  before ladling into soup bowls.
