INSTRUCTIONS
Beat eggs, sugar and salt slightly. Add milk, vanilla (if desired), rice,
raisins and grated lemon rind (if desired). Pour into 1-quart casserole (6
1/2") and set in pan of water (1" deep). Sprinkle with nutmeg. Bake 3 hours
in a slow oven (oven temp is not give, but the cookbook defines a "slow
oven at 250-300 degrees F), stirring three times in the first hour. Bake
until a silver knife thrust into custard comes out clean. Immediately
