INGREDIENTS

LIGHT SINGLE PIE CRUST PASTRY:
1/2 c All-purpose flour
1/4 ts Baking powder
1/4 ts Salt
3 tb Diet margarine
1 tb Corn oil
5 c Golden delicious apples; thinly sliced
1/2 c Golden raisins
2 tb Undiluted apple juice concentrate; defrosted
2 ts Cornstarch
1 ts Ground cinnamon
1 ts Grated lemon peel
1/4 ts Grated nutmeg
1/4 ts Allspice
1 pn Salt; optional
6 pk Low-calorie sweetener; to taste

INSTRUCTIONS

FILLING
Stir flour. baking powder and salt together. Cut in the margarine and oil
with a pastry knife or 2 forks; knead lightly until pastry forms a ball.
Flatten, wrap and chill 1 hour. Flour a pastry board and roll as thin as
possible with a floured roller. Gently fit pastry into an 8-inch nonstick
pie pan which has been liberally sprayed with cooking spray. Stir remaining
ingredients, EXCEPT sweetener, together, spoon into pie shell. Cover
mixture with another smaller inverted pie pan or a circle of aluminum foil
cut to fit. Bake in preheated 375 oven just until crust is golden and
apples are tender. Remove from oven; uncover filling and cool 5 minutes or
more, then sprinkle the filling evenly with no-calorie sweetener. Serve
warm or cool.
Makes 8 servings, 145 calories each.
