INSTRUCTIONS
TO GARNISH
1. Top each piece of bread with a lettuce leaf. Fold the beef slices in
half and put on one side of each slice.
2. Put a mound of cottage cheese on the other side.
3. Put slices of apple and a twist of orange in the middle, and garnish
with olives.

NOTES : Though not a main course dish, these open sandwiches provide a
substantial and healthy lunch, particularly in the summer. The beef is more
moist if it has been cooked rare.
