INSTRUCTIONS
BAKE at 350 degrees for 50 to 60 minutes. MAKES 9 x 5-inch loaf. Sift
together flour, baking powder, soda, and salt. Blend together butter and
sugar in mixing bowl. Add 1 unbeaten egg; beat well. Grate rind in 1 medium
orange (1 to 2 tablespoons); reserve. Combine juice of 1 orange with enough
boiling water to measure 1 cup. Add alternately with dry ingredients to
creamed mixture, beginning and ending with dry ingredients. Blend well
after each addition. Stir in 1 cup dates, cut fine and nuts, chopped, and
the orange rind. Turn into 9 x 5 x 3-inch pan, well greased on the bottom.
Bake in moderate oven (350 degrees) 50 to 60 minutes. Cool before slicing.
*For use with Pillsbury's Best Self-Rising Flour, increase flour to 2 1/4
cups. Omit baking powder, soda and salt.
