This is still another chess pie of the Southern tradition. This is
particularly interesting in its inclusion of oranges in the custard,
perhaps an addition made in light of California's abundant citrus supply.
Grate the rind and chop or slice the insides of enough oranges to fill a
pie shell. Mix the other ingredients and pour over the oranges. Do not
cover with dough, since this is a single-crust pie. Bake in a moderate
(350°) oven until set.
