INSTRUCTIONS
Saute celery and onion in butter until vegetables are limp. Combine
celery-onion mixture with rice, water, orange juice, orange peel, and salt
in steaming pan. Cover and steam until rice is done, 18 to 20 minutes.
Uncover and allow rice to dry out, 3 to 5 minutes. Adjust seasoning if
necessary. Fluff with a fork before serving.
NOTES : Agreeably pungent, orange rice is a perfect accompaniment for duck
or other poultry.
