How to Prepare the Skirt Steak:
1. In a large shallow baking dish, combine the soy sauce, orange juice,
pepper, and garlic and stir to combine.
2. Place the steak in the marinade and turn to coat both sides. Let
marinate for 4 hours or overnight, turning occasionally. Preheat the grill.
3. Remove the meat from the marinade and place the marinade in a medium
non-corrosive saucepan. Bring the marinade to a boil over medium-high heat
for 2 minutes.
4. Season the meat with salt and pepper, to taste and grill the steak, 3-4
minutes on each side or to desired doneness, basting every few minutes with
the marinade.
5. Remove from the heat, let sit for 5 minutes, slice thinly against the
grain. Top with the relish.
How to Prepare the Relish:
1. Whisk together the lime juice, oil, and zest in a medium bowl until
combined.
2. Add the green onions and oranges, toss with the mixture, and let sit at
room temperature at least 1 hour before serving.
