INGREDIENTS

6 | oz | Smoked turkey breast, cut |

1/4 | c | Red cabbage, finely |

1/4 | c | Fresh cilantro, chopped and |
Loosely packed | ||
3 | T | Lemon juice |
2 | T | Regular or lowfat |
Mayonnaise | ||
2 | t | Olive oil |
INSTRUCTIONS
Cook the orzo according to the package directions, but without adding the salt. Drain, then rinse with cold water and drain again. In a large bowl, combine the orzo, turkey, onions, cabbage and cilantro. In a small bowl, stir together the lemon juice, mayonnaise and oil. Add to the orzo mixture and toss until well coated.
