INSTRUCTIONS
Cook orzo and cool. Cook peas and carrots. Steam chopped broccoli (stems
and top) until crisp. Chop scallions, including tops. Mix all ingredients,
except mushrooms. Lightly saute sliced mushrooms in peanut oil with
crushed garlic. Mix in with the rest of the salad. Variations: Rice or
oriental noodles may be substituted for orzo; shrimp may be substituted for
ham; add or substitute vegetables. Always use scallions!
Dressing:
1/4 c peanut oil 2 Tb sesame seed oil 2 Tb sake or sherry 2 Tb soy
sauce
1 ts celery seed salt and pepper to taste
Mix and pour over salad.
