INGREDIENTS
1 1/2 | c | Flaked coconut, loosely |

1 | c | Seasoned breadcrumbs |
1/4 | c | Unsalted butter, melted |
2 | Eggs, beaten until foamy | |
3 | lb | Chicken pieces |
INSTRUCTIONS
Prep: 10 min, Cook: 50 min. Preheat oven to 350øF. Combine coconut and breadcrumbs in a shallow dish. Season with salt and pepper to taste. Pour melted butter into a baking pan. Dip chicken in egg, one piece at a time, then roll in coconut mixture. Arrange chicken skin side down in pan. Bake 25 minutes.
