Noodle pudding, or kugel, is a traditional Jewish delicacy. There are
hundreds of variations, sweet or savory, with or without fruit, to be
served as a side dish or dessert.
I don't really use a recipe -- just improvise. The only required
ingredients are noodles and eggs. (3-4 eggs, or 5-6 egg whites, for each
pound of noodles.) The noodles can be any width. Optional ingredients are
fried onions (for a savory kugel), salt, sugar, pepper, fruit (pineapple or
apples are good), fruit juice, milk, cottage cheese, yogurt or sour cream,
oil or butter or margarine. A crumb topping can be added, if desired. Mix
everything together, put into a baking pan and bake at about 375F till
browned.
I did find one recipe in my files, which follows. (I haven't tried it.)

Grease a 9 x 9 inch baking pan. Arrange the raw noodles on the bottom of
the pan. In a large mixing bowl, beat the eggs and sugar until light; add
the milk; beat together. Stir in the cottage cheese and raisins. Pour the
mixture over the noodles, then cover and refrigerate overnight.
Before baking, spinkle cinnamon sugar on the top. Bake for 1 hour and 15
minutes in a 350 degree F oven, the first half of the cooking time covered
and remainder of the time uncovered.
