INSTRUCTIONS
If using fresh spinach, trim, rinse, shred and cook in a covered saucepan with the minimum of water for 1-3 minutes, until tender. Cook frozen spinach according to the packet instructions. Tip the spinach into a colander and drain thoroughly, pressing the green with the back of a spoon to get rid of the excess moisture. Put the spinach, spring onions, butter, salt and mustard in a food processor or blender and pure until smooth. Return to a saucepan and heat through, stirring. Serve hot. Converted by MC_Buster.
