INGREDIENTS

1 Loaf French Bread; Day Old
2 md Ripe Tomatoes; Diced
1 White Onions; peel, slice
1 md Cucumbers; peel, seed, slice
1/8 c Parsley; chopped
2 tb Capers; drained
1/4 c Fresh Basil; chopped
2 tb Olive Oil
1 tb Balsamic Vinegar
2 tb Lemon Juice
1 Clove Garlic; crushed
Salt And Pepper; to taste
1/8 c Parmesan Cheese; grated

INSTRUCTIONS

DRESSING
Combine all dressing ingredients in a large bowl. Whisk until smooth. Add
remaining ingredients and toss well. Allow to stand at room temperature for
about 30 minutes. Toss again and serve.
