INGREDIENTS

250 g Dried pasta penne; cooked and
; refreshed (8oz)
50 g Frozen petit pois; defrosted (2oz)
2 Oranges; pared into segments
2 tb White wine vinegar
1 ts Dijon mustard
5 tb Olive oil
Salt and freshly ground black pepper
1 tb Freshly chopped parsley

INSTRUCTIONS

FOR THE PASTA SALAD
FOR THE DRESSING
Place the pasta, peas and orange segments in a bowl and mix.
Make the dressing by mixing all the ingredients together in a screw top
jar.
Pour the dressing mixture over the pasta, pea and orange mixture, stir to
incorporate. Serve immediately.
