1 Parsnip; grated
1/2 sm Vidalia onion; finely diced
1 Celery stalks; chopped, up to 2
6 Ripe or green olives; chopped (each kind

2 c Salad greens; torn into pieces
1/4 c Tarragon Dressing; (recipe follows)
; plus more if
; desired
2 tb Mayonnaise

INSTRUCTIONS

Place the parsnip, onion, celery, olives and salad greens in a salad bowl.
Mix the tarragon dressing with the mayonnaise and pour the dressing over
the greens. Toss well.
