INGREDIENTS

1 lb Sliced squash or eggplant
1 ts Sugar
1/2 c Mayonnaise
1/2 c Minced onion
1/4 c Chopped green pepper
1/2 c Chopped pecans
1 Egg; slightly beaten
1/2 c Grated cheese
Salt & pepper to taste
Bread or cracker crumbs
1/2 Stick butter or margarine

INSTRUCTIONS

Cook squash, drain & mash. Add other ingredients except butter & crumbs.
Put in 2-quart casserole. Top with crumbs & dot with butter. Bake 35-40
minutes at 350. Serves 8.
