1 c Cooked and chopped spinach
with excess water
squeezed
out
1 Onion, minced
2 T Sweet butter
1 c Heavy cream
1 lb Ricotta
1 lb Pasta, shells bows etc.
cooked according to
package
directions
1/2 c Freshly grated Parmesan
cheese

INSTRUCTIONS

minced onion in butter.  Add the cooked spinach, heavy cream and
ricotta. Stir and cook for  about 3 minutes.  Combine cooked and
drained pasta with spinach/cheese mixture and toss  with Parmesan
