INGREDIENTS

4 oz Angel hair pasta OR: 2 cups
cooked pasta
1 c Onion, finely chopped
1 t Garlic, finely chopped
6 6 oz low-fat deli-style
ham chopped
4 Eggs
4 Egg whites
1/2 c Part-skim Mozzarella cheese
shredded
3/4 c Parmesan cheese, grated
2 T Parsley, chopped
1 t Italian Seasoning
1/4 t Salt
1 pn Ground hot red pepper

INSTRUCTIONS

Makes : 4 servings at $1.12 each. Prep: 5 minutes. Cook: 10 minutes.
Bake: at 450° for 10 minutes.  Heat oven to 450-F. Cook pasta
according to directions. Drain.  Meanwhile, coat large nonstick skillet
with ovenproof handle with  nonstick cooking spray. Add onion; cook
over medium heat for 5  minutes. Add garlic; cook 1 minute. Add ham;
cook 1 minute. Set  aside. Lightly beat eggs, egg whites, mozzarella,
Parmesan, parsley,  Italian seasoning, salt and red pepper in
medium-size bowl. Stir in  drained pasta and ham mixture from skillet.
Recoat same skillet with  nonstick spray. Pour egg mixture into
skillet; cook over medium heat  3 minutes. Transfer skillet to oven.
Bake in 450° oven 10 minutes or  until top is set. Let stand 5 minutes
before cutting. Serve warm.  Nutrient Value Per Serving: 336 calories,
12 g fat (5 g saturated),  28 g protein, 29 g carbohydrate, 982 mg
