I have also wondered how to get the same effect of those dried tomatoes
that you find soaked in oil....but no luck... But I did find a close
alternative for those that love bell peppers or capsicums as we call them
here in Australia.....a few weeks ago there were quite cheap so I bought
several of them...so with the help of SO we arrived to a beautiful mixture
that can be kept in a jar in the fridge and resembles the looks (and taste
in a way) of those in jars preserved in oil... Not sure what to call the
recipe but feeling egotisitical today I will call it:
"Paul's capsicums"--Lovely in sandwiches or on top of other meals and it is
so simple..:
Sliced raw peppers in strips....then lightly "fry" peppers in a pan with
soya sauce...and garlic.......add a little balsamic vinegar ...keep on
stirring till peppers soften up...important not too overcook..taste and if
necessary add a couple of drops of lemon juice....add more soya sauce if
necessary...and stir once again... taste and add pepper... Store in fridge
in a sealed jar.... .
The mixture will produce its own juices in the jar and looking at it, most
people will swear that it is loaded with oil ......I use it mainly in
sandwiches....but I have also out it on top of rice dishes...yum yum..
