INSTRUCTIONS
FILLING
Mix cooky ingredients together in large bowl.
Roll out on lightly floured board to a thinner thickness than regular
cookies. Cut with any large round cutter that is big enough to cover the
filling (about 2 1/2 to 3 inches in diameter).
Place one round on cookie sheet and place about 1 tsp of filling in the
center. Dampen the edges with water and lay second round over the top.
Press the edges together to seal.
Bake at 375°F for about 15 minutes or until they start to turn light brown.
Cool on a rack. (If they last that long... ;+})
** Filling **
Mix the filling ingredients together in a saucepan over medium heat. Cook
until the dates have soaked up the sugar/water liquid. Remove from heat and
allow to cool.
Optional fillings:
: Mix 1 cup of dates and 1 cup of raisins. Blend with other filling
ingredients and cook. This makes a mincemeat flavor filling.
: Use your favorite preserves: grape, strawberry, cherry, raspberry,
apple, etc... DO NOT USE JELLY.
