1/4 | c | Sugar |
1/8 | t | Salt |
2 | T | Butter, softened |
2 | t | Vanilla |
1 | c | Spanish peanuts, chopped |
1/2 | c | Flaked coconut |
INSTRUCTIONS
from "Goin' Nuts" ...a variation of pecan pie.... Heat oven to 375°. In large bowl, combine eggs, corn syrup, sugar, salt, butter & vanilla. Blend well at medium speed. Stir in peanuts & coconut. Pour into unbaked pie shell. Bake at 375° for 35-45min or til crust is golden. Cool thoroughly for several hours. Serve w/ whipped cream or vanilla ice cream, if desired.
