1/4 | c | Butter |
1 | c | Diced mango |
1/2 | c | Diced peaches |
3 | Strips lemon rind | |
1 1/4 | c | CHICKEN STOCK |
1 | T | Lemon juice |
1/2 | c | Heavy cream |
Salt & pepper |
INSTRUCTIONS
Preheat oven to 350. Fry chicken in butter until brown on all sides. Add mango, peaches, rind & stock. Cover & bake 1 hour. Remove chicken from pan & keep warm. Remove rind. Add juice & cream.
