Preheat oven to 400°
Use sugar only if using fresh peaches If using frozen allow them to thaw
and do not add additional sugar
Peel and slice peaches, add sugar and beaten egg; stir. Pour fruit mixture
into a well greased baking pan. With a hand beater, beat the egg yolks
until they are a very pale yellow. Add the sugar, almond extract &
cornstarch and continue beating until mixture is fluffy In a separate bowl,
beat egg whites until stiff; fold into egg/sugar mixture Pour the batter
over the fruit and bake for 30 minutes.
