INGREDIENTS

2 Peaches, ripe
1/3 c Coconut, grated
1/3 c Golden raisins -OR-
1/3 c Dried cherries
2 T Orange juice concentrate-OR-
2 T Grand marnier liqueur
1 T Mint, fresh chopped

INSTRUCTIONS

"...perfect served over ice cream, sherbet, toasted pound cake or
yougrt cheese."  Cut peaches in half and remove pits. Dice. Combine all
ingredients.  Let stand 1/2 hour before serving. MAKES: about 2 CUPS
