INGREDIENTS

1 lb Ripe Peaches, peeled pitted
and s
2 t Fresh Mint, chopped
3/4 c Fruity White Wine, *see note
1/3 c Sugar, Or To Taste
1 T Fresh Lemon Juice

INSTRUCTIONS

Place all ingredients in a blender or food processor and process until
smooth. Strain through a fine mesh strainer and discard pulp. If  sugar
is not dissolved, continue to stir until it is.  Pour mixture into ice
cube trays and freeze until solid. To serve:  Place cubes in a single
layer in a food processor and pulse several  times to create uniform
ice particles. Repeat as necessary with  remaining cubes and serve
immediately in frozen stemmed glasses.  Yield: 4 servings Recipe By :
