INGREDIENTS

1/4 c Water
1/4 c Honey
1 2" Vanilla Bean
4 Peaches, or nectarines
Pitted, pealedand thickly
Sliced
1 T Lemon juice
1 pt Vanilla nonfat yogurt

INSTRUCTIONS

Bring water, honey, and vanilla bean to boil; reduce heat and simmer 5
minutes. Add peaches; raise heat to bring mixture back to a fast
simmer. Simmer until peahes are just softened, 10-15 minutes,
depending on ripeness. Remove from heat; stir in lemon juice.
Refrigerate at least 2 hours. Serve over frozen yogurt.  File
