INGREDIENTS
1/4 | c | Water |
1/4 | c | Honey |
1 | 2" Vanilla Bean | |
4 | Peaches, or nectarines | |
Pitted, pealedand thickly | ||
Sliced | ||
1 | T | Lemon juice |
1 | pt | Vanilla nonfat yogurt |
INSTRUCTIONS
Bring water, honey, and vanilla bean to boil; reduce heat and simmer 5 minutes. Add peaches; raise heat to bring mixture back to a fast simmer. Simmer until peahes are just softened, 10-15 minutes, depending on ripeness. Remove from heat; stir in lemon juice. Refrigerate at least 2 hours. Serve over frozen yogurt.
