Freshly grated Pecorino cheese; (imported parmesan may be substituted) |
INSTRUCTIONS
Combine olive oil and pepper flakes. Bring to a boil and add garlic gloves.
Marinate for at least 30 minutes and strain with cheese cloth. In a
saucepan, heat 4 T of strained chili-garlic oil with tomatoes. Add salt.
keep warm over low heat. Cook pasta in boiling water. Drain well, toss in
sauce pan with oil, tomatoes and parsley. Serve with grated cheese. Serves
4.
