INGREDIENTS

2 c Spinach leaves
1/2 lb Ground lamb
1/2 Lemon; juice of
Lemon; ¥
1 Onion
1 Egg
1/2 Red bell pepper
2 tb Olive oil
2 ts Dried thyme
1 sm Yellow bell pepper
1 sm Green bell pepper
Salt & black pepper

INSTRUCTIONS

Place lamb in bowl of food processor. Add juice, onion, egg & spinach.
Process until well blended. Heat oil in saute pan over medium heat & add
thyme, stirring a few seconds. Add yellow & green peppers to pan. Saute 2
minutes until softened. Remove lamb from processor bowl & form into
patties. Place in pan with peppers & cook on each side until crusty &
golden brown. Season to taste with salt & black pepper. Serve patties &
peppers with lemon wedges.
Approximately 10-15 minutes.
Per serving: 1092 Calories; 86g Fat (70% calories from fat); 50g Protein;
34g Carbohydrate; 346mg Cholesterol; 262mg Sodium
