INSTRUCTIONS
1. Pound fillets to 1/2-inch thickness.
2. Roll pounded fillets in pepper on one side only.
3. Heat pan until hot, add butter and melt until butter browns but is not
burned.
4. Add fillet, pepper side down on medium-high heat. Sear for 3-5 minutes.
5. Turn and add Grand Marnier and chutney.
6. When steak is done, remove from pan. Finish sauce on low heat, swirling
constantly.
7. Pour sauce over steak and serve.
NOTES : Try Major Grey's mango chutney, found in the condiment section at
better supermarkets.
